- 1 can salmon (about 15 ounces)

In a medium-sized skillet, add the olive oil to prevent the salmon from sticking. After draining the can of salmon, add the fish to the skillet. Then add the spinach, cover and let the recipe simmer for about 2 minutes.
At this point, the spinach will have wilted and will be easy to mix into the salmon. Add in the two eggs and crumble the shells into the mixture. Stir continuously until the eggs are fully cooked.
