- 1 lb. boneless chicken breast
- 1 tbsp. coconut oil
- 1 cup UNCOOKED quinoa
- 2 zucchinis (chopped)
- 1 cup green beans (chopped)
- 3 cups kale (chopped)
Directions
The first step is to cut the chicken breast into slices. Add the chicken slices to a warm skillet with the coconut oil. Cook until the chicken is thoroughly browned and cooked through.
While the chicken is cooking, prepare the quinoa according to the instructions on the package. Once the chicken has finished cooking, add the vegetables to the skillet. Cover and let the mixture cook on low heat for about 10 minutes or until the kale is withered and soft.
