Cake Ingredients

  • 2 eggs
  • 1.5 cups coconut flour
  • 1/4 cup blueberries
  • 2 tsp. raw honey
  • 3 tbsp. melted coconut oil

Frosting Ingredients

  • 2 tbsp. raw honey
  • 3/4 cup plain yogurt
  • natural food coloring (optional)

Instructions

Preheat your oven to 350˚F.

Mix the eggs, honey and melted coconut oil together in a medium-sized mixing bowl. Stir in the coconut flour and blend until smooth. Add the blueberries and mix thoroughly.

Grease a small loaf pan with coconut oil and fill it with the batter. Bake for 25-30 minutes. While the cake is baking, mix the honey and yogurt together to make the frosting. You can add natural food coloring if you choose.

Let the cake cool before frosting it. You can use strawberries slices and blueberries to decorate the cake.
